Walnut cake*
*Recipe:
mix 175 g self raising flour with 1.5 table spoon baking powder, 175 g golden caster sugar, 175 g melted butter, 3 eggs, finely chopped roasted walnuts and a small cup of strong black coffee.
Bake for 30/40 mins in a preheated oven, gas mark 170 degrees.
Leave to cool ad once cooled, then slice the cake into 2 circles, fill in with butter icing.
Butter icing: whisk a pot of melted brandy butter with 3 pots of icing sugar, pieces of chopped walnuts, and drops of vanilla aroma.
Spread the cake, put the second circle on top, cover with white icing or white melted chocolate, add your decorations, and put in the fridge to let the icing settle.
